Sweet Potato Toast

Sweet potato and avocado are one of the best combos! They pair so well together and don't need much else to be satisfying and filling all at the same time. Sweet potato toast is one of those new phenomenons that makes vegan eating easy and well rounded. Love it. This was my breakfast the other morning. :) 

Here's the recipe:

  • two thinly cut slices of 1 organic sweet potato - I just wash + scrub my sweet potato and leave the skin on for added nutrients 
  • place in a toaster on high - I only had to do this 1x in my toaster, so check that the potato is thoroughly cooked through the center with a fork and if not--toast again
  • mix together 1/2 an avocado with 1/4 teaspoon extra virgin olive oil, pink salt, pepper and freshly squeezed juice of 1/4 of a lemon
  • add avocado mixture on top of your toasts
  • top with red pepper flakes + a pinch of nutritional yeast 
  • Enjoy!
