Tofu Scramble Breakfast Tacos

These are my FAVORITE breakfast lately. Packed with protein, healthy fat and veggies to fuel your day and get you up and going for activities. Here's what you need:

For the scramble:

  • 1 block extra firm organic tofu
  • 1/4 chopped white onion
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon ground turmeric powder
  • pinch of cayenne pepper
  • himalayan pink salt + pepper to taste
  • 1 clove of minced garlic
  • 1 teaspoon extra virgin olive oil or coconut oil

Start by preparing your tofu. Place paper towels underneath and on top of your tofu block and press to remove excess liquid. Then slice into one inch cubes.

Next, heat oil in a sauce pan on low heat. Add minced garlic and onion and let simmer and cook until browned, about 5 minutes. Throw in your tofu cubes and turn the heat up to medium. You will want to stir to combine ingredients. Add spices first, and nutritional yeast last. 

Heat tortillas on a flat plate on the stove and load up your warmed tortillas with the scramble and any veggies you'd like! I love to add my favorite salsa, tomatoes, pickled jalapeños, spinach and avocado. Get creative and enjoy!
