Chia Pudding Smoothie with Mango

         More smoothie love ~ I can never get enough. Fresh organic fruits are the BEST way to start your day. This one takes a little extra prep time but it is SO worth it. I made one huge smoothie and ended up finishing it all to myself. It contains chia seeds which have amazing healthy fats and some protein, as well as maca root powder that works to energize the body and stabilize hormones. It's a simple but delicious smoothie - making breakfast feel like dessert. Days with these smoothies are so energizing and filling that I often find I don't need coffee. Here's the recipe:

Chia Pudding Ingredients:

  • 1/4 cup of chia seeds

  • 1 cup plant-based milk (almond, cashew, soy, coco...you name it)

  • pinch of cinnamon

  • drizzle of maple syrup (or agave, or coconut sugar)

  • 1-2 drops of organic vanilla extract

Chia Pudding Prep:

  • Mix all the ingredients together and store in an airtight container overnight (or 6-8 hours) in the refrigerator

  • After refrigeration, the mixture with a have a gelatinized, pudding-like texture

Smoothie Ingredients:

  • Chia Pudding

  • 3-4 frozen organic bananas (it's best to freeze bananas that are decently ripened ~ black speckled nanas) this way, the starches have been broken down in the bananas, making them easier carbohydrates to digest 

  • 1-2 cups plant-based milk (almond, cashew, soy, coco...you name it)

  • 1/2 cup of frozen organic mango 

  • 1 teaspoon organic maca root powder

Smoothie Prep:

  • Place all ingredients (except plant-based milk) in a high speed blender such as a Ninja or Vitamix

  • Blend while slowly adding plant-based milk until your smoothie has reached the desired consistency

  • Enjoy!!
