PB+J Vegan Waffles with Banana

Well this obviously is a win right? I had to share this amazing recipe for vegan pancake/waffle batter! Only a few simple ingredients that are so affordable and probably already in your kitchen. This batter is vegan, soy and gluten free.

ingredients. 

(3 servings!)

  • 2 bananas
  • 3 cups raw rolled oats
  • 3 cups your favorite plant based milk
  • pinch of cinnamon
  • teaspoon vanilla extract
  • lemon zest to taste

prep.

  • first add oats into a high speed blender until you've made oat flour!
  • next add your remaining ingredients and blend until smooth batter is formed
  • here you can stir in sliced banana or any other fruit
  • heat waffle or pancake iron - option to use coconut oil for hot cakes or not
  • cook each pancake/waffle on either side until golden 
  • enjoy with peanut butter and your favorite fruit preserves for PB&J breakfast on another level!
