Simply Everything Spinach Salad (Raw/Vegan)
One of the biggest benefits that I've experienced so far through choosing a plant based diet is that I do not crave processed foods like I used to. I have noticed that my body craves dark leafy greens every day. Not only does your body send signals that it needs daily greens, your digestion will thank you as well. Eating tender leafy greens daily can help to bring your body vital nutrients that plant-based eaters especially require, such as plant-sourced iron, calcium and vitamin K. These required nutrients help to digest all the other foods that you consume in a productive and healthy manner. Your stomach will be at ease and bloating/inflammation shouldn't continue to be an issue that you experience. Experiment with feeding your body raw greens every day and notice the changes that occur :) You will not be disappointed!
My favorite greens are raw spinach and kale. Today I made a big raw salad as I was craving greens and plenty of unprocessed, whole foods.
Here's the recipe:
- Place in bowl 2 cups raw organic spinach
- In a separate bowl combine:
1/2 raw organic beet, shredded
1 whole organic carrot, shredded
1 handful of organic raisins
1/4 organic apple, diced
1 TB balsamic vinegar
1 Teaspoon organic extra virgin olive oil
1/4 lemon, juiced
pink salt
Mix all together and add on top of your bed of spinach! Enjoy.
