Buddha Bowl

The best recipes always come when it's one of the days you need to get creative, use whatever veg you have left and make something unique and amazing. Today's buddha bowls were just that, and it always amazes me how the body naturally tends to crave the nutrients and foods that it most needs to operate at it's best. My boyfriend and I threw these together today for lunch and were super satisfied and felt light as well as energized. :)

Ingredients: (I try to use all organic produce + products)

  • 1.5 cups of raw broccoli, chopped
  • 3 cups of raw spinach
  • 1 cup chopped red cabbage
  • 1 cup cooked quinoa
  • two handfuls sprouts
  • 1 tablespoon cold-pressed coconut oil
  • Himalayan pink salt
  • Pepper
  • Goddess dressing
  • Fresh squeezed lemon juice

Prep:

·      Heat coconut oil in pan and add chopped broccoli

·      Sautee until wilted while adding pink salt, pepper and a squeeze of lemon juice

·      Combine the quinoa and the remaining washed + cut ingredients in a bowl with sautéed broccoli and top with goddess dressing and more lemon juice
