Chili Garlic Red Bean Burger

Hello beautiful people! I thought it might be fun to have a guest today on Make with Madelene, so my sweet friend Sarah decided to contribute and write a recipe post for us. Vegan of course! HUGE thank you to Sarah for coming up with such a fun burger night recipe that's completely plant-based. These chili garlic red bean burgers are simple + affordable to make, as well as packed with protein and yumminess. Check out the recipe (serves two) below:

For the burger patties:

  • 3/4 cup cooked quinoa
  • 1 - 15 oz can of Red Beans, rinsed and drained
  • 3/4 cups bread crumbs
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 1/2 tsp Sea salt
  • 1 tsp chili powder
  • 1 tbsp Chili Garlic Sauce (Huy Fong Chili Garlic Sauce is my favorite!)
  • Pinch of Cayenne pepper
  • 2 tbsp olive oil

Condiments:

  • 4 burger buns, lightly toasted
  • 1 avocado mashed
  • 1 Sliced tomato
  • Sliced Dill pickles
  • Mustard to taste
  • Any Vegan cheese you like ( I used Follow your heart’s Cheddar)
  • Leafy green of choice ( I used up some power greens I already had in the fridge)

Prep:

  1. Add the red beans to a medium bowl and mash with a potato masher or fork. Leave a few beans half whole for texture. Add the cooked quinoa, bread crumbs, garlic powder, paprika, cumin, chili powder, sea salt, cayenne, and chili garlic sauce. Combine. If the mixture appears too dry (it won't hold its shape) add a drizzle of olive oil.
  2. Heat the oil in a large skillet on medium. Once the oil is hot, add the veggie burgers. Fry on each side for 4 minutes. Add cheese on top (optional) and transfer to oven on low broil for a few minutes to firm up the burgers and melt the cheese if you added it.
  3. Serve with suggested toppings.
