Sweet potato, brown rice & black bean patties

These vegan burger patties on a bed of greens (or with all the burger fixins') makes a complete and balanced meal! Perfect for anyone, even those not following a vegan diet. Made from 100% whole foods that are rich in so many nutrients including plentiful plant proteins, fibers, complex carbohydrates, healthy fats and nourishing vitamins and minerals. Some of my favorite spices like cumin, pink salt, fresh cracked pepper, red pepper flakes, parsley and nutritional yeast take the flavor of this patty to the next level!

Ingredients (use all USDA Organic if possible!):

  • 2 TB flaxseeds

  • 5 TB filtered water

  • 3/4 cup cooked brown rice

  • 2 tsp coconut oil

  • 1 vidalia onion, diced

  • 2 TB raw garlic, minced

  • 1 and 1/2 cup sweet potato, cooked (I roast mine for 30 mins, 375 degrees F with pink salt and melted coco oil)

  • 1 can black beans, drained + rinsed

  • 1/2 cup carrot, grated

  • 1/4 cup parsley

  • 1/2 cup raw rolled oats, blended until fine consistency formed

  • 1 TB coconut aminos

  • 1/2 tsp crushed red peps

  • 1 tsp cumin

  • pink salt and black pepper, to taste

Prep Steps:

  1. Preheat oven to 375 degrees F.

  2. start by roasting sweet potato

  3. soak flax seeds while you wait for the potato to roast by combining flax seeds with water and allowing them to soak. you'll want to stir with a spoon every so often to prevent clumping

  4. heat coconut oil in a pan on the stove and sauté onion and garlic until fragrant and then add in the roasted sweet potato - stirring and cooking for about 5-6 mins.

  5. pulse rinsed black beans in the blender until mushy

  6. place beans and onion, garlic and sweet potato into a large mixing bowl and mix with fork

  7. add in all other remaining ingredients and continue mixing!

  8. oil a roasting pan with coconut oil, then form 6-7 patties using 1/2 cup of the mixture at a time making sure the patties are evenly spaced

  9. bake for 20 minutes, flip patties

  10. bake for an additional 15-20 minutes until browned on each side

Enjoy on a bed of dark leafy greens or go big and get all the vegan fixins' such as whole grain burger buns, ketchup, mustard, pickles, etc.
