Lush Life Salad

These are the types of meals that cleanse the body from within, providing you with radiant skin and vibrant energy. Focusing on eating dark leafy greens and varieties of such every day makes a huge difference because we're incorporating nutrients from the Earth. These greens and veggies are packed with Vitamin A, Vitamin C, Vitamin K, calcium, iron and potassium. On top of the raw greens and vegetables are nutrient-dense ingredients like tahini, avocado, sprouted pumpkin seeds and lemon juice. With all of this combined, this salad brings around 14 grams of plant-protein! How easy was that to get in? As well as about 30 grams of nourishing unsaturated fats (the good fats). Eating lunches like this makes us feel full but not overstuffed, and provides adequate energy to take you through the rest of your day. Ingredients (organic is best):

  • 8 leaves of romaine lettuce, rinsed and chopped

  • 1 cup radicchio, rinsed and chopped

  • 1/2 cucumber, sliced

  • 1/2 cup cherry tomatoes, sliced

  • 1/4 cup green onion, sliced

  • 2 big stalks celery, sliced

  • 1/2 cup fresh sprouts (I used zesty radish sprouts)

  • 1/2 creamy avocado

  • 1 tablespoon raw tahini (sesame paste)

  • 2 tablespoons Go Raw sprouted pumpkin seeds

  • 1 teaspoon coconut aminos

  • 1/2 lemon, juiced

Prep Steps:

  • toss all the prepped veggies together in a large mixing bowl

  • make the dressing by whisking together the lemon juice, coconut aminos and tahini in a smaller bowl on the side

  • top salad with avocado, homemade dressing and pumpkin seeds
